Today’s Fairmont Peace Hotel has gone by many names in its 80-year history. From the Central Hotel when it first premiered in the 1850s to the Palace Hotel when it dominated the Shanghai skyline in 1902 at six stories to the Cathay Hotel in 1932 (pictured), the one thing that has always remained the same is its iconic green copper roof.
